all went well on brew day yesterday.  Only one mild boilover.  Assistant brewer Jim was on hand, and we went on a pre-brew run which I believe is going to become a tradition. I don't have $500 right now (for more beer "tools"), so I just added a dump valve and a collecting valve and engineered a way to make a lid that seals. Last night I had a pint of Drank Tank's American Pale Ale.  Now, I am known in our brewing circle as the "anti-hop", so any pale ale is a sketchy proposition...but not this one.I dare you to have one pint.  It's impossible. Already tasting smooth with a hint of bitterness. Very malty and just a hint of phenols (alcohol taste). Gravity at 1.014, and that's where it will certainly stay. The yeast I've used for the vienna and this bock is outstanding. So we ended up with what is barely a bock. No worries. DT wanted to use the 13gal fermentor he brought back from Tennessee, so that's what we did. I've compiled a list of exceptions to the "No Fruiting Beer" Man-Law:- Lime wedge in Dos Equis Amber Lager.  I'm not sure why, but lime bits in this Vienna style lager is a tasty treat.- Lime in Corona.
