Paradigm Shift


Not in brewing, in location. That's right! RCBC is now headquartered in San Antonio, TX! I hope this explains the lack of updates. Problem is, all my gear is still in NC, so no brewing news until we find a permanent home (we are currently renting).


Why? My lovely wife took a new job down here. I'm excited for her, and cautiously optimistic for me. Right now I am looking for a JOB, as a had to resign in NC to move down and look in TX.

Anyway, we are looking for a permanent home and trying to sell our house in High Point. I hate to leave it, as I had it setup perfect for brewing, but the new place will give me a chance to setup a new and IMPROVED RCBC.

Flurry of Activity

With the RCBC first ever Winter Brewfest coming up next weekend I've been a busy brewmeister! Also had my friend visit from California and he wanted to see the brewery in action, so I brewed up a belgian dubble (Ommegang-ish). I also kegged up my El Camino Vienna, Forty-Weight Brown, and bottled the vanilla variety of Danielle's Birthday Strawberry Ale.

Shew! The TBC Bock is in diacetyl rest, and I will keg the rest of the Strawberry later this week, just in time for the BrewFest...

Cloudy Scotsman

This beer won't hunt...

Really, it won't clarify. I finally gave up and carbonated 1/2 the batch and tasted last night. Not bad, but definitly not very good. Much like the NFL Colts my confidence has grown shaky. In fact, since I switched to the new pumping system I haven't brewed a truly GOOD beer*. Everything has been mediocre at best, and nasty at worst. Based on the outcome of the two beers I brewed last week I will decide whether to fall back to the original version of the RCBC.

Hopefully this will work out and it will be contamination and bad recipes instead!

* Exception being the BVIP for the BBG. I tasted while transferring to kegs this past weekend and DAMN it was GOOD!
